Yogurt-Honey Melon Cream
The yellow honey melon combined with yogurt and honey becomes a fruity-light delight that refreshes without weighing you down.

Ingredients
½ yellow honeydew melon (approx. 600–700 g flesh), diced
250 g Greek yogurt
2 tbsp honey
1 tsp vanilla extract (optional)
2 tbsp chopped pistachios or almonds
a few fresh mint leaves
Preparation
Peel the melon, remove the seeds and cut it into small cubes.
Stir the yogurt with honey and vanilla until smooth.
Layer in glasses: yogurt, melon, yogurt again.
Top with pistachios and mint.
Chill briefly if desired and serve.
