Yogurt-Honey Melon Cream

The yellow honey melon combined with yogurt and honey becomes a fruity-light delight that refreshes without weighing you down.

Ingredients

  • ½ yellow honeydew melon (approx. 600–700 g flesh), diced

  • 250 g Greek yogurt

  • 2 tbsp honey

  • 1 tsp vanilla extract (optional)

  • 2 tbsp chopped pistachios or almonds

  • a few fresh mint leaves

Preparation

  1. Peel the melon, remove the seeds and cut it into small cubes.

  2. Stir the yogurt with honey and vanilla until smooth.

  3. Layer in glasses: yogurt, melon, yogurt again.

  4. Top with pistachios and mint.

  5. Chill briefly if desired and serve.
